Little Meringue Clouds

        These little meringue clouds are very easy to make, but they are extremely time consuming. But in these times, we've got all the time in the world. Though these take a long time, they're absolutely delicious.



Recipe

Prep time:15 minutes
Cook time: 2 hours (plus 2 hours left in oven)
Makes: 24 clouds

Ingredients

4 large egg whites
1/2 teaspoon cream of tartar
1/4 teaspoon salt 
1 cup powdered sugar (see note)

Directions

  1. Preheat the oven to 200 degrees F and line 2 baking sheets with parchment paper.
  2. In the bowl of a stand mixer beat the egg whites, cream of tartar, and salt.
  3. Mix until egg whites start getting foamy, about 1 or 2 minutes.
  4. Increase the speed to medium-high speed and continue beating until thick and foamy, 1-2 more minutes.
  5. With the mixer on medium-high, slowly add the sugar, little by little.
  6. Continue beating until stiff peaks form, (see note) 4-6 minutes.
  7. Using a small spoon (see note) transfer little blobs of meringue onto the baking sheets.
  8. Put the little lumps in a 3x4 array
  9. Using the back of a spoon, shape meringues in to little clouds by making indentations and peaks.
  10. Bake for 2 hours. Then, turn the oven off and leave for 1-2 hours, or until dry and crispy.

Notes

I didn't believe the recipe when I saw it, but it actually worked! Instead of confectioners sugar I used granulated sugar and it worked just fine.
