Big Giant Oatmeal Cookie

          This cookie is a perfect giant oatmeal chocolate chip cookie, and it's just perfect. It has the perfect oats-to-cookie ratio and it's just amazing. 




Recipe

Makes: one giant cookie
Prep time:15 minutes
Cook time:14 minutes

Ingredients

4 tablespoons butter, melted
1/4 cup lightly packed brown sugar
2 tablespoons white sugar
1 egg yolk 
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cooking oats (you can use rolled oats, too)
1/2 cup chocolate chips

Directions

  1. Preheat the oven to 325 degrees and line a cookie sheet with parchment paper.
  2. Melt your butter in a heat-safe mixing bowl.
  3. Mix in sugars, egg yolk, and vanilla.
  4. Sprinkle flour, baking soda, baking powder, and salt on top and then mix together.
  5. Stir in oats and chocolate chips.
  6. Form dough into one large ball and place on prepared baking sheet.
  7. Gently press down to about 3/4 inch thick.
  8. Bake for 11-14 minutes, or until slightly golden brown around the edges.
  9. Let cool for 10-15 minutes and enjoy!

Notes

Instead of chocolate chips, you can make it an oatmeal raisin cookie by adding 1/2 cup raisins and 1/4 teaspoon cinnamon. This cookie looks like a regular chocolate chip cookie because it doesn't have much oats and you can't  taste them, but they're there.
