This cookie is a perfect giant oatmeal chocolate chip cookie, and it's just perfect. It has the perfect oats-to-cookie ratio and it's just amazing.
Recipe
Makes: one giant cookie
Prep time:15 minutes
Cook time:14 minutes
Ingredients
4 tablespoons butter, melted
1/4 cup lightly packed brown sugar
2 tablespoons white sugar
1 egg yolk
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup cooking oats (you can use rolled oats, too)
1/2 cup chocolate chips
Directions
- Preheat the oven to 325 degrees and line a cookie sheet with parchment paper.
- Melt your butter in a heat-safe mixing bowl.
- Mix in sugars, egg yolk, and vanilla.
- Sprinkle flour, baking soda, baking powder, and salt on top and then mix together.
- Stir in oats and chocolate chips.
- Form dough into one large ball and place on prepared baking sheet.
- Gently press down to about 3/4 inch thick.
- Bake for 11-14 minutes, or until slightly golden brown around the edges.
- Let cool for 10-15 minutes and enjoy!
Notes
Instead of chocolate chips, you can make it an oatmeal raisin cookie by adding 1/2 cup raisins and 1/4 teaspoon cinnamon. This cookie looks like a regular chocolate chip cookie because it doesn't have much oats and you can't taste them, but they're there.
